The Polish Cabbage that nearly defeated me and Waffle Wednesday a la Polska

Not long after I arrived in Poland, I began to want to cook again. After 12 years of cooking for a living I  really enjoyed a summer away from the cooker and the sink, but pretty soon after I arrived I got itchy to cook up some favourites. It has been, however somewhat of a challenge as not only are the ingredients in Polish but also very different and although my kitchen is well stocked with saucepans and scissors there isn't a potato masher to be found and the knives are decidedly bendy which is why an enormous cabbage nearly got the better of me at the weekend!

The produce here is super tasty and lovely to cook with and after a really successful baked cauliflower (only just fitted in my little oven) I though I would try some roasted cabbage and ended up having to saw away the sides of it!

Other adaptations have been home made garlic bread, delicious but not the same and the scrumptious crispy-on-the out-side-pappy-in-the-middle pre-cut version from  a UK supermarket!



Up-graded Pizza. Adding potato, olives and cheese was fab. I have adopted Gouda as my cheese de cuisine


Potato gratin with smoked salmon.  The smoked salmon here is really chunky and more salty so this worked really well. The gratin topping wasn't quite so successful as I  had a nightmare trying to make bread crumbs. it had unique bread boulders as a topping!!


 I had a go at pancakes but they were terrible in my very non non-stick saucepan but cinnamon mug cake was a great success. Measurements in table spoons was the winning strategy.

The iconic Crowley Waffle Wednesday has adapted well  to a lack of fresh fruit (within a 5 min walk when its -3*). This one was with chocolate sauce made from instant hot chocolate mix


It's not easy holding  scolding boiled eggs so I cobbled together an egg cup!

However my efforts pale to insignificance compared to my college who made filo pastry on a Friday morning before work because he was missing  Burek sa Sirom, a Balkan cheese pie!
